Cheese and Leek Soup with Minced Beef

This quick soup is a real family favorite. With leeks, minced beef, and a mild cream cheese combination, it's wonderfully creamy – Perfect for cold days or as a filling dinner.
Ingredients for 4 servings

800g leeks (unpeeled)

2 cloves garlic

200g cream cheese (double cream)

50g grated cheese (e.g., Cheddar or Mountain cheese)

Preparation

Clean the leek, wash it thoroughly, and cut it into thin rings.

Finely chop the garlic.
2. Fry the minced meat.
Heat the oil in a large pot. Fry the minced meat until lightly browned.
3. Add leek and garlic
Add leek and garlic to the pot and sauté for 5 minutes, until the leek collapses slightly.
4. Finish the soup

Deglaze with vegetable stock and bring to a boil

Simmer for 5 minutes

Stir in the cream cheese and grated cheese and stir until melted.

Season with salt, pepper, and freshly grated nutmeg.
